Lemon Bars

Ingredients

  • 1 cup flour
  • 1/2 cup butter
  • 1/4 cup icing sugar
  • 1 cup sugar
  • 2 tsp lemon peel (optional)
  • 2 tbsp lemon juice
  • 1/2 tsp baking powder
  • 1/4 tsp salt (optional)
  • 2 large eggs

I can't recall making these so I will have to try them out again and see.


Preheat:350 ° F
Prep Time:10 min
Cook Time:50 min
Ready In:1 hr
Servings:1 pan

Directions

  1. Preheat oven to 350 degrees.
  2. In medium bowl, mix flour, butter, and 1/4 c icing sugar. Press into ungreased 8×8 pan building up 1/2 inches on each side. Bake crust 20 min and remove from oven.
  3. Using a mixer, in small bowl, beat remaining ingredients (sugar, lemon, lemon juice, baking powder, and salt) on high for 3 minutes or until light and fluffy.
  4. Bake 25-30 min or until no indentation remains.
  5. Cool and dust with icing sugar.
