Lemon Bars
Ingredients
- 1 cup flour
- 1/2 cup butter
- 1/4 cup icing sugar
- 1 cup sugar
- 2 tsp lemon peel (optional)
- 2 tbsp lemon juice
- 1/2 tsp baking powder
- 1/4 tsp salt (optional)
- 2 large eggs

Directions
- Preheat oven to 350 degrees.
- In medium bowl, mix flour, butter, and 1/4 c icing sugar. Press into ungreased 8×8 pan building up 1/2 inches on each side. Bake crust 20 min and remove from oven.
- Using a mixer, in small bowl, beat remaining ingredients (sugar, lemon, lemon juice, baking powder, and salt) on high for 3 minutes or until light and fluffy.
- Bake 25-30 min or until no indentation remains.
- Cool and dust with icing sugar.
