Nanaimo Bars
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 10 tbsp cocoa
- 2 tsp vanilla
- 2 large eggs
- 4 cups graham wafers
- 2 cups coconut
Middle Layer
- 1/4 cup butter
- 1 1/2 – 2 cups icing sugar
- 4 tbsp vanilla custard
- 3 tbsp milk (as needed)
Top Layer
- 8 squares semi-sweet chocolate
- 2 tbsp butter

Directions
- Bottom Layer: Mix butter, sugar, cocoa, vanilla, eggs, graham crackers, and coconut in the top of a double broiler. Pour into a glass pan. Set in fridge.
- Middle Layer: Cream butter. Add 1 tbsp of milk. Add icing sugar and vanilla custard. Add remainder of milk as needed. Place in fridge.
- Top Layer: Mix baking squares and butter in a small bowl and microwave. Stir. Once icing is cool, add top layer and refrigerate.
Notes
Make sure the middle layer is firm before adding the chocolate topping.
