Nanaimo Bars


  • 1/2 cup butter
  • 1/2 cup sugar
  • 10 tbsp cocoa
  • 2 tsp vanilla
  • 2 large eggs
  • 4 cups graham wafers
  • 2 cups coconut

Middle Layer

  • 1/4 cup butter
  • 1 1/2 – 2 cups icing sugar
  • 4 tbsp vanilla custard
  • 3 tbsp milk (as needed)

Top Layer

  • 8 squares semi-sweet chocolate
  • 2 tbsp butter

A family recipe that is a favourite at Christmas time.

  1. Bottom Layer: Mix butter, sugar, cocoa, vanilla, eggs, graham crackers, and coconut in the top of a double broiler. Pour into a glass pan. Set in fridge.
  2. Middle Layer: Cream butter. Add 1 tbsp of milk. Add icing sugar and vanilla custard. Add remainder of milk as needed. Place in fridge.
  3. Top Layer: Mix baking squares and butter in a small bowl and microwave. Stir. Once icing is cool, add top layer and refrigerate.


Make sure the middle layer is firm before adding the chocolate topping.
