Blueberry Crumble Cake

Ingredients

  • 1 1/4 cup sugar
  • 1/4 cup shortening
  • 1 large egg
  • 1/2 cup milk
  • 2 1/3 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt (optional)
  • 2 cups blueberries
  • 1/3 tsp cinnamon
  • 1/4 cup butter (softened)

I still haven't made this recipe but the kids really enjoy it.


Preheat:375 ° F
Prep Time:30 min
Cook Time:25 min
Ready In:1 hr
Servings:1 cake

Directions

  1. Preheat oven to 375 degrees and grease a 8” x 8” pan.
  2. In large bowl, cream together 3/4 c sugar, shortening, and egg.
  3. In medium bowl, mix 2 c flour, baking powder, and salt. Stir into wet mixture alternating with milk.
  4. Stir in blueberries.
  5. TOPPING: Combine 1/2 c sugar, 1/3 flour, cinnamon, and butter. Sprinkle over cake batter.
  6. Bake in preheated oven for 25-30 min.

Notes

Take the butter out of the fridge a couple hours before baking.
