Blueberry Crumble Cake
Ingredients
- 1 1/4 cup sugar
- 1/4 cup shortening
- 1 large egg
- 1/2 cup milk
- 2 1/3 cups flour
- 2 tsp baking powder
- 1/2 tsp salt (optional)
- 2 cups blueberries
- 1/3 tsp cinnamon
- 1/4 cup butter (softened)

Directions
- Preheat oven to 375 degrees and grease a 8” x 8” pan.
- In large bowl, cream together 3/4 c sugar, shortening, and egg.
- In medium bowl, mix 2 c flour, baking powder, and salt. Stir into wet mixture alternating with milk.
- Stir in blueberries.
- TOPPING: Combine 1/2 c sugar, 1/3 flour, cinnamon, and butter. Sprinkle over cake batter.
- Bake in preheated oven for 25-30 min.
Notes
Take the butter out of the fridge a couple hours before baking.
