Pineapple Delight
Ingredients
1 box of vanilla wafers
1/2 cup melted butter
2 1/4 cups of icing sugar
2 eggs
1/2 cup butter
1 can crushed pineapple
2 cups of whipping cream
1/2 tsp vanilla (optional)

This was a recipe my mom loved as a child. We really enjoyed it and I hope you do too!

Directions
Bottom Layer:
- Preheat oven to 375
- Grind up the vanilla wafers into a crumb. (works well to put into a food processor and grind until a fairly fine consistency)
- Melt 1/2 cup of butter.
- Remove 1/4 cup of wafer crumbs and safe for later. Mix the rest of the wafer crumbs with the butter and press the mixture into the bottom of a 9×11 pan
- Bake at 375 for 10 minutes.
- Set aside and let cool to room temperature then place in the fridge to keep cool.
Middle Layer:
- Soften 1/2 cup of butter and mix until fluffy.
- Add 2 cups of icing sugar and 2 eggs. Beat on med-high speed for 8 minutes until very thick and creamy.
- Spread over top of the crumble base.
Top Layer:
- Mix 2 cups of whipping cream with 1/4 cup icing sugar and 1/2 tsp vanilla. Blend until firm and creamy.
- Drain canned crushed pineapple.
- Fold in the pineapple chunks to the whipped cream.
- Spread on top of the middle layer.
- Sprinkle remaining 1/4 cup of cookie crumb over the whipped topping.
- Chill in the fridge until ready to serve. Enjoy.
