Pineapple Delight

Ingredients

1 box of vanilla wafers

1/2 cup melted butter

2 1/4 cups of icing sugar

2 eggs

1/2 cup butter

1 can crushed pineapple

2 cups of whipping cream

1/2 tsp vanilla (optional)

This was a recipe my mom loved as a child. We really enjoyed it and I hope you do too!


Preheat:375 degrees F
Prep Time:15 minutes
Cook Time:10 minutes
Ready In:1 hour

Directions

Bottom Layer:

  1. Preheat oven to 375
  2. Grind up the vanilla wafers into a crumb. (works well to put into a food processor and grind until a fairly fine consistency)
  3. Melt 1/2 cup of butter.
  4. Remove 1/4 cup of wafer crumbs and safe for later. Mix the rest of the wafer crumbs with the butter and press the mixture into the bottom of a 9×11 pan
  5. Bake at 375 for 10 minutes.
  6. Set aside and let cool to room temperature then place in the fridge to keep cool.

Middle Layer:

  1. Soften 1/2 cup of butter and mix until fluffy.
  2. Add 2 cups of icing sugar and 2 eggs. Beat on med-high speed for 8 minutes until very thick and creamy.
  3. Spread over top of the crumble base.

Top Layer:

  1. Mix 2 cups of whipping cream with 1/4 cup icing sugar and 1/2 tsp vanilla. Blend until firm and creamy.
  2. Drain canned crushed pineapple.
  3. Fold in the pineapple chunks to the whipped cream.
  4. Spread on top of the middle layer.
  5. Sprinkle remaining 1/4 cup of cookie crumb over the whipped topping.
  6. Chill in the fridge until ready to serve. Enjoy.
